Coconut Curry Green Beans

Chef Kristine Subido of Wave restaurant share's a recipe she prepares at home:

1 bag of Trader Joe's frozen French green beans

2 tbsp. canola oil

1 medium onion, sliced

2 cloves peeled garlic, chopped

1 tbsp. chopped ginger

1 can of light coconut milk

1 tbsp. curry powder

1 tbsp. fish sauce (optional)

Salt and pepper to taste

Heat a medium-sized pan. Add oil, and once it's heated add garlic and ginger and sauté for one minute. Add the sliced onions and curry powder and cook a few minutes until tender. Add the green beans and cover for five minutes until the green beans steam. Turn the heat to medium-low. Pour the can of coconut milk and simmer until it thickens by half. Season with fish sauce (optional), salt and pepper. Garnish with chopped cilantro.
