Grace brown's spinach-artichoke casserole
MAKES 8 SERVINGS
2 (10-ounce) packages frozen chopped spinach, thawed and squeezed dry
1 (13 and 1/3 ounce) can artichoke hearts, drained and chopped
1/2 cup heavy cream
Æ teaspoon salt
Æ teaspoon freshly ground black pepper
2/3 cup Parmesan cheese, divided
1 (8-ounce) package cream cheese
1 cup whole milk
In a large bowl, combine spinach, artichokes, cream, salt, pepper and 1/3 cup Parmesan cheese and stir well. Coat a 1 1/2 quart casserole dish or 8- by 8-inch baking pan with non-stick spray. Place the spinach mixture into the prepared dish or pan and set aside.
In a small bowl, beat the cream cheese until fluffy, add milk and beat again to blend. Pour cream cheese mixture over spinach. Sprinkle the remaining 1/3 cup Parmesan cheese over the top. Bake in a preheated 350-degree oven for 30 minutes or until hot and beginning to brown on top.
