Baked sweet potatoes with brown sugar glaze

MAKES 6 SERVINGS

6 large sweet potatoes

1/4 cup canola oil

1 tablespoon salt

2 teaspoons pepper

GLAZE:

1 cup brown sugar

1/4 cup butter

Wash the potatoes, scrubbing heavily soiled areas. Place potatoes in a large bowl; toss with oil, salt and pepper. Place potatoes onto sheet trays, separating. Place trays into 350-degree oven; bake for 40 to 45 minutes or until soft and tender.

For glaze: In small saucepan over medium heat, melt brown sugar with half the amount of butter. Once sugar and butter have melted, use a spoon to add remainder of butter to sauce.

Cut sweet potatoes down center; spoon brown sugar glaze over potato tops. Serve warm.
