Charlie's enchilada casserole

MAKES 8 SERVINGS

2 cups grated sharp Cheddar cheese, divided

1 (12-ounce) bag Doritos, divided

1 (15-ounce) can chili with beans

1 (15-ounce) can enchilada sauce

1 (8-ounce) can tomato sauce

2 tablespoon grated onion

1/2 cup sour cream

Preheat oven to 375 degrees.

Measure out 1/2 cup of grated cheese and set aside. Place remaining cheese in a large bowl. Divide bag of Doritos into thirds and set 1/3 aside.

Crush remaining chips and place in bowl with cheese. Add chili, enchilada and tomato sauces and grated onion to bowl along with cheese and chips. Mix well.

Place mixture in a greased 8-cup casserole dish and place in oven for 20 minutes.

Remove casserole from oven and spread top with sour cream. Cover with reserved chips and top with reserved grated cheese.

Return to oven and bake for another 5 minutes. Serve hot.
