Adzuki rice

MAKES 6 SERVINGS

 

3/4 cup adzuki beans

 

61/2 cups water

 

2 cups brown rice

 

1/2 teaspoon sea salt

 

10 to 12 sliced scallions

 

2 tablespoons tamari sauce (or to taste)

 

Wash beans and drain. Put beans in pot with water and bring to a boil.

 

Reduce heat, cover, and simmer for 35 minutes. Stir in rice and salt, and bring to a boil again. Reduce heat, cover, and simmer for 50 minutes. Stir in scallions and tamari. Serve hot with additional tamari on the side.

 

Note: Adzuki beans (sometimes spelled azuki) and tamari, which is similar to soy sauce, can be found in natural and health food stores.
