Baked cheese grits

MAKES 18 SERVINGS

1-1/2 cups quick-cook grits

3/4 cup butter, cut into 1/2-inch cubes

1 pound Velveeta cheese (plain or Mexican style), cut in 1/2-inch cubes

3 eggs, beaten

2 teaspoons salt

3 dashes hot pepper sauce

Preheat oven to 250 degrees. Lightly grease a 9x13-inch baking pan and set aside.

Bring 6 cups of water to a boil and slowly stir in grits. Reduce heat to low and cook for 5 minutes, stirring occasionally. Add butter and stir until melted. Add cheese and stir until melted. Remove from heat.

In a small bowl, combine eggs, salt and hot sauce. Stir egg-salt mixture to the grits and mix until well-combined. Pour grits into prepared pan and bake for 1 hour.

Serve hot or at room temperature.
