Barbecued baked beans

October 30, 2002

MAKES 7 (1/2-CUP) SERVINGS

3 slices bacon

1/2 cup chopped onion

1 (28-ounce) can pork and beans in tomato sauce

1/4 cup barbecue sauce

2 tablespoons molasses or brown sugar

2 teaspoons prepared mustard

1 teaspoon Worcestershire sauce

Preheat oven to 350 degrees.

In a skillet, cook bacon until crisp. Remove bacon, reserving bacon drippings. Drain bacon, crumble and set aside.

Cook onion in reserved bacon drippings over medium heat until tender but not brown. In a 1-1/2-quart casserole, combine onion, baked beans, barbecue sauce, molasses, mustard and Worcestershire sauce. Bake, uncovered, for 1 hour. Remove from oven, stir beans and top with reserved bacon. Let stand 5 minutes before serving.
