4 baby red potatoes, quartered and grilled (or roasted)
2 halibut fillets (7 ounces each)
Salt and pepper, to taste
Flour (for dusting)
Oil (for sauteing)
3 strips smoked, diced bacon
1 medium apple, peeled and thinly sliced
1/2 cup thinly sliced red onion
Lemon wedge (optional)
Cooked shrimp or lobster are fine substitutes for the crab called for in this recipe. Author Mark Bittman also suggests crushed tortilla chips, diced tomato or crumbled queso fresco.
