MAKES 6 CRAB CAKES

BREAD CRUMBS 1 tablespoon garlic, finely chopped
1 teaspoon shallots, finely chopped
1 teaspoon fresh parsley, finely chopped
1 cup white bread crumbs, fresh
Æ teaspoon salt
Æ teaspoon white pepper, ground

MUSTARD MAYONNAISE 1/2 cup regular mayonnaise
2 teaspoons Dijon mustard
1/4 teaspoon Worcestershire sauce
1/2 teaspoon prepared horseradish

CRAB CAKES 1 pound jumbo lump crabmeat
1 cup prepared bread crumbs
1 tablespoon parsley, fresh and finely chopped
2 tablespoons Mustard Mayonnaise
1 teaspoon Dijon mustard
1/4 cup whole egg
1/2 teaspoon Worcestershire sauce
1/4 teaspoon Tabasco sauce
Clarified butter, as needed
Lemon, cut in 6 wedges for garnish

To make the bread crumbs, in a mixing bowl, thoroughly mix garlic, shallots and parsley into bread crumbs. Add salt and pepper.

Prepare the Mustard Mayonnaise by mixing mayonnaise, mustard, Worcestershire sauce and horseradish thoroughly in a stainless steel mixing bowl using a wire whip. (2 tablespoons will be used to prepare crab cakes; the rest will be served on the side).

Preheat oven to 450 degrees.

Drain crabmeat of all excess liquid and place in a stainless bowl. Add bread crumbs and toss to distribute evenly. In a separate bowl, combine parsley, Mustard Mayonnaise, Dijon mustard, egg, and Worcestershire and Tabasco sauces with a wire whip. Pour over crabmeat mixture. Mix gently to combine all ingredients. Divide evenly into 6 portions and form into balls. Flatten slightly to 1-inch thick (do not make perfectly flat because cake should have grooves).

Place portioned crab cakes on a non-stick cookie sheet slightly oiled with clarified butter. Place in oven and bake approximately 5 minutes on first side. Turn crab cake over using a metal spatula. Finish baking (approximately 4 minutes). Place crab cakes in center of plate. Garnish with lemon and 1 tablespoon of Mustard Mayonnaise per crab cake.
