Door county fish boil

MAKES 4 SERVINGS

1/2 cup salt, divided

8 small potatoes, peeled and quartered

8 small peeled onions or 4 medium onions, peeled and quartered

4 (5-ounce) fresh whitefish or cod

Melted butter

Lemon wedges

Add 1/4 cup salt to 1 gallon of water and bring to a rapid boil. Add potatoes and boil for 16 minutes. Add onions and boil for 4 more minutes. Add fish and remaining salt and boil for an additional 10 minutes. Drain immediately into a colander and serve hot with melted butter and lemon wedges.
