Wigilijny kompot z suszu (Christmas eve dried-fruit compote)
MAKES ABOUT 2 QUARTS
2 ounces dried apple slices (about 12)
2 ounces dried apricots (about 12)
2 ounces dried pear slices (about 8)
2 ounces pitted prunes (about 6)
½ cup sugar or to taste
2 whole cloves
2 cinnamon sticks or to taste
Water (about 8 cups)
Fresh lemon juice to taste (optional)
Rinse all the dried fruit in a colander under hot running water.
Put the fruit, sugar and spices in a large pot and cover with the water. Bring to a boil, reduce the heat, cover and simmer for 45 to 60 minutes until the liquid has achieved a lot of flavor. Add lemon juice, if desired.
Refrigerate, covered, overnight to let the flavors meld. Serve in a punch bowl at room temperature.
Note: Dobra Bielinski's family doesn't add lemon juice, but she says it balances out the sweetness.
