MAKES 10 (1/2 CUP)

SERVINGS

1 (3-ounce) package lemon gelatin
1 cup boiling water
1 (16-ounce can) whole cranberry sauce
1 (11-ounce) can Mandarin oranges, drained and halved
1 (8-ounce) can crushed pineapple with juice
1 apple, chopped, cored
1/2 cup chopped celery
1/2 cup chopped walnuts (optional)

Place gelatin in a large mixing bowl, add water and stir until crystals have dissolved. Add cranberry sauce and mix until smooth (use the back of a wooden spoon to mash large pieces). Stir in Mandarin oranges, pineapple, apple, celery and walnuts (if desired). Pour into a 4-cup mold and chill overnight. Serve cold.
