MAKES ABOUT 2 CUPS

1 cup flat-leaf Italian parsley, finely chopped

3 garlic cloves, minced

1 tablespoon chili flakes, crushed

1 cup extra-virgin olive oil

1 tablespoon sherry or red wine vinegar

Combine all ingredients. Stir well before use. Can store refrigerated for up to 2 weeks. After refrigeration, allow sauce to warm to room temperature before using.
