Fried Bologna Sandwich

The fried bologna sandwich is simple but delicious - it's bologna, grilled onions and mustard on white bread. (Scott Stewart~Sun-Times)

This snack is disarmingly delicious.
MAKES 1 SANDWICH
Score 1 slice bologna at the edge and griddle until lightly browned. (Scoring is important so the sides don’t curl up.) Position meat on 1 slice of white bread so nothing is hanging out. Top with 1/4 cup grilled onions, mustard and second bread slice.
