MAKES 16 SERVINGS

1½ pounds cucumbers, sliced
1/8 -inch thick

2 tablespoons fat-free Italian
dressing

2 whole-grain (18-ounce) pizza crusts

1 tablespoon canola oil

4 cups black beans, drained and mashed

2 teaspoons garlic powder

1 pound cooked turkey breast

1½ teaspoons ground cumin

1½ teaspoons ground black pepper

8 ounces sliced Provolone cheese

Place cucumber slices and Italian dressing in bowl. Let stand 1 hour, then drain.

Preheat oven to 450 degrees. Brush both sides of both pizza crusts with oil. Lay one crust on baking sheet. Mix black beans with garlic powder, then spread mixture on crust. Season turkey with cumin and black pepper and spoon evenly over beans. Cover turkey with a layer of cucumber slices, then a layer of cheese. Cover with second pizza crust.

Top with another baking sheet (this will allow plancha to crisp and bake evenly). Bake for 7 to 8 minutes. Slice into wedges and serve.
