MAKES 6 TO 8 SERVINGS

1 pound smoky Polish sausage, such as weselna (wedding sausage)

4 hard-cooked eggs

4 tablespoons mayonnaise

Ground black pepper to taste

Grind the sausage and eggs with a meat grinder or process carefully in a food processor with on-off turns. Stir in the mayonnaise and pepper until well combined.

Use as a sandwich spread on some fresh Polish bread. (Pickles are a nice accompaniment.)
