Rinds, stems and leaves are perfectly edible fruit and veggie parts that get a bad rap. The following list includes parts of fruits and vegetables we actually can eat, rather than throw away.
Cauliflower stems. While the florets of the cauliflower are by far the most popular, the stalks don’t have to be trash-bound. Stems work well in soups or even sliced and sauteed.
Broccoli stems and leaves. Chock-a-block with vitamins and flavor, these stalks taste fabulous in soups or stir-fries when sliced thinly.
Carrot tops. Although weedy in appearance, these edible, parsley-like leaves work well in soups or chopped in salads.
Celery leaves. With an intense celery flavor, these leaves go well in soups and on salads, or used as an herb with grains or even sprinkled on other cooked vegetables or proteins.
Watermelon rind. Thick, but perfectly edible, watermelon rinds are delicious year- round, with a little foresight — and pickling skills.
