1 avocado

6 eggs or 1½ cups egg

½ cup turkey or chicken, chopped

2 slices turkey bacon, crisp and crumbled

¼ cup bleu cheese

¼ cup scallions, chopped

Rinse avocado, cut in half, and remove pit. Spoon out flesh and cut into chunks.

In medium bowl, beat eggs or egg substitute. Stir in avocado, turkey or chicken, bacon, bleu cheese and scallions.

Heat non-stick skillet with pan coating over medium-high heat. Add egg-avocado mixture and scramble, stirring occasionally, until eggs are set but still moist.
