Bourbonless chicken

MAKES 4 SERVINGS

8 skinless boneless chicken thighs, trimmed of any fat and cut in half

Salt and pepper to taste

1/4 cup low-sodium soy sauce

1/4 cup firmly packed dark brown sugar

1/2 cup dark corn syrup

1/4 cup balsamic vinegar

1 tablespoon sherry vinegar

1/2 teaspoon liquid smoke

2 tablespoons dried minced onion

1 teaspoon ground ginger

1/2 teaspoon garlic powder

Place the chicken in a 9x13-inch baking dish in a single layer and sprinkle with salt and pepper.

In a medium-size mixing bowl, whisk together remaining ingredients; pour evenly over the chicken. Cover the dish with aluminum foil and let marinate in the refrigerator for several hours or overnight.

Preheat the oven to 325 degrees. Remove the foil and bake, basting frequently, until the chicken is well-browned and glazed, about 1-1/2 hours.

Serve immediately.
