A chicken in every pot (with wrinkled vegetables)

MAKES 6 SERVINGS

Nonstick olive oil spray

2 cups vegetables of a certain age (onions, celery, carrots,potatoes, sweet potatoes, parsnips), chopped coarsely

6 fresh chicken pieces

4 cloves garlic, past their prime, sliced

1 tablespoon freshly grated ginger

1 teaspoon salt

Few grinds of freshly ground pepper

2 teaspoons tamari

1 tablespoon freshly squeezed llemon juice

1 tablespoon honey

1 tablespoon olive oil

Preheat oven to 350 degrees. Spray baking pan with olive oil spray. Place vegetables on bottom of pan. Cover with chicken pieces.

Combine garlic, ginger, salt, pepper, tamari, lemon juice, honey and olive oil; pour over chicken and vegetables. Bake for 1-1/2 hours.
