Barbecue chicken pizza

MAKES 4 SERVINGS

1 pre-made 10- or 12-inch pizza crust (Boboli type)

1½ cups barbecue sauce

1 boneless grilled chicken breast (seasoned with salt, pepper and olive oil), cut into strips

½ red onion, cut into thin strips

2 tablespoons vegetable oil

½ cup Monterey Jack cheese, shredded

½ cup jalapeno Jack cheese, shredded

1 tablespoon cilantro, chopped

Preheat oven to 350 degrees.

Spread 1 cup barbecue sauce over pizza crust. Toss strips of seasoned grilled chicken breast in ½ cup barbecue sauce; add on pizza crust.

Saute onion strips in vegetable oil; add on pizza crust. Sprinkle shredded cheeses over top. Bake until cheese is melted (5 to 7 minutes). Remove pizza from oven; sprinkle chopped cilantro over top. Makes 1 (12-inch) pizza.
