Campfire chicken cooked in hay

MAKES 3 TO 4 SERVINGS

1 (4-pound) whole chicken

Salt and pepper, to taste

2 pounds hay (see Note)

1 large onion, roughly chopped

6 garlic cloves

1 carrot, roughly chopped

1 celery stalk, roughly chopped

Prepare a wood fire using a fire pit or ring with adjustable grates.

Season chicken, including inside cavity, with salt and pepper. Stuff chicken with onions, garlic, carrots and celery. Line bottom of a Dutch oven with a handful of hay. Place chicken on top, cover with remaining hay and put lid on.

Place Dutch on grate over hot fire. Roast for about an hour or until the juices run clear and chicken reaches an internal temperature of 160 degrees.

Note: You can find hay at most garden centers.
