MAKES 8 SERVINGS

2 cups milk

3/4 cup sugar

½ cup Original Bisquick mix

4 eggs

1/4 cup butter or margarine

1½ teaspoons vanilla

1 cup shredded coconut

Combine milk, sugar, Bisquick, eggs, butter and vanilla in electric blender. Cover and blend at low speed for 3 minutes.

Pour into greased 9-inch pie pan. Let stand about 5 minutes, then sprinkle with coconut. Bake at 350 degrees for 40 minutes or until golden brown and knife inserted in center comes out clean.

Serve warm or cold. Cover and refrigerate leftovers.
