Keturah's honey sweet potato pie
1 10-inch pre-formed deep dish wheat flour pie crust, baked
3 eggs, slightly beaten
1/3 cup local clover honey
3 cups cooked, well-mashed sweet potatoes
½ cup melted butter
1½ teaspoon ground cinnamon
½ teaspoon salt (Chicago Honey Co-Op uses Himalayan)
1/3 teaspoon ground ginger
½ teaspoon allspice
½ teaspoon nutmeg
Preheat oven to 350 degrees. Thoroughly blend all ingredients together in a large bowl. Pour filling into cool baked pie crust and bake for 30 to 45 minutes, or until a knife inserted in the center comes out clean. Serve with whipped cream, if desired.
