Oyster and shiitake mushroom pie


MAKES 6 TO 8 SERVINGS

1/3 cup organic butter

1 to 2 medium onions, chopped

1 pound oyster mushrooms, sliced

½ pound shiitake mushrooms, sliced

2 tablespoons sherry or cognac

Salt and freshly ground black pepper to taste

1 tablespoon flour

½ cup heavy cream

Pastry for an 8-inch double crust pie

In a large skillet, heat the butter and saute the onions and mushrooms for 5 to 10 minutes. Stir in the sherry or cognac, salt and pepper. Add the flour and cream, and cook until the mixture begins to thicken. Let the mixture cool while preparing the crust. Preheat oven to 450 degrees. Pour mushroom mixture into pie crust. Add a lattice top or get creative and hand-cut the pastry into mushroom or animal shapes. Bake for 20 minutes, or until crust is browned and filling is bubbly.
