Impossible pie

MAKES 8 SERVINGS

4 eggs
2 cups milk
1/2 cup sugar
1/2 cup flour
4 tablespoons butter or margarine
1 teaspoon vanilla extract
1 cup coconut
Dash of ground nutmeg

Preheat oven to 350 degrees.

Grease and flour a 10-inch, glass pie plate and set aside.

In a blender, combine eggs, milk, sugar, flour, butter, vanilla and coconut. Cover and blend on high speed for 1 minute or until frothy. Pour into prepared pie plate and sprinkle top with nutmeg.

Bake for 40 minutes or until light brown. Remove and place on rack to cool completely. Serve at room temperature or chill.

Nutrition facts per serving: 302 calories, 19 g fat, 5 g saturated fat, 125 mg cholesterol, 26 g carbohydrates, 7 g protein, 70 mg sodium, 1 g fiber
