BLT french bread pizza
MAKES 6 SERVINGS
4 slices bacon, cut into 1-inch pieces
1 large leek or 3 scallions, coarsely chopped
1/3 cup mayonnaise
1 3/4 teaspoons original Tabasco (pepper sauce), divided
1 (10-inch) French bread loaf
2 medium tomatoes, sliced
1 cup shredded mozzarella
In a 10-inch skillet, cook bacon over medium-high heat until crisp, stirring occasionally.
With a slotted spoon, remove bacon to paper towels to drain. Over medium heat, cook chopped leeks or scallions and 1/4 teaspoon Tabasco in bacon drippings until tender-crisp, stirring frequently. Set aside.
In small bowl, combine mayonnaise and 1 teaspoon Tabasco until blended.
Preheat oven to 400 degrees. Slice French bread horizontally in half; open and place on a large cookie sheet. Brush cut side of bread with ½ teaspoon Tabasco; spread with mayonnaise mixture. Evenly spoon leek or scallion mixture on pizza. Top with tomato slices and crumbled bacon; sprinkle with cheese. Place on lower rack of oven. Cook 10 to 12 minutes or until lightly browned and cheese is melted.
