MAKES 8 SERVINGS
Crust
1 (9-inch) prepared chocolate crumb crust ¼ teaspoon cinnamon
1 (12-ounce package , or 2 cups) semi-sweet chocolate chips 1½ cups heavy (whipping) cream, divided 1 teaspoon cinnamon 2 teaspoons vanilla extract ¼ cup confectioner’s sugar Additional whipped cream, chocolate sprinkles or fresh berries (optional garnishes)
For filling: In medium-sized microwave-safe bowl, combine chocolate chips and ½ cup heavy (whipping) cream; microwave on high 1 to 2 minutes or until melted and smooth, stirring every 30 seconds.
Stir in cinnamon and vanilla extract. Chill chocolate mixture in ice water bath, stirring frequently until chocolate is cooled to room temperature.
In separate bowl, beat remaining 1 cup cream on high speed of electric mixer, gradually adding confectioner’s sugar until soft peaks form. Stir 1/3 of whipped cream into cooled chocolate mixture. Gently fold in remaining whipped cream; spoon into crust. Cover; refrigerate 2 to 3 hours or until set. Garnish with additional whipped cream, chocolate sprinkles or fresh berries, if using.
