Angel hair pasta with tomatoes and basil

MAKES 4 TO 6 SERVINGS

½ small red onion (about ¼ cup)

½ cup fresh basil or 1 teaspoon dried basil

1 teaspoon bottled crushed garlic

1 (28-ounce) can ready-cut tomatoes

2 tablespoons olive oil

½ teaspoon salt

¼ teaspoon black pepper

16 ounces angel hair (vermicelli) pasta

Grated cheese (optional)

Fill a large pot with water; cover and begin heating over high heat.

Peel the red onion and cut it into ?206-140?-inch pieces. Rinse fresh basil, if using, and cut it into thin strips.

Put onion and basil into a large bowl. Add garlic. Drain tomatoes, discarding the liquid, and add to the bowl. Add olive oil, salt and black pepper. Set the mixture aside.

When the water comes to a boil, add angel hair pasta and cook according to directions.

Drain pasta and transfer it to the bowl. Mix well and sprinkle with Parmesan cheese, if desired.

Serve immediately or leave until the pasta reaches room temperature.

We'd serve this with bagged green salad mix, steamed broccoli and garlic bread (packaged is fine). Also, angel hair is a good choice because it cooks so fast.
