FRUIT COMPOTE SUPREME

MAKES 6 TO 8 SERVINGS

1 (16-ounce can, or 2 cups) sliced peaches, undrained

1 cup dried apricots

½ cup brown sugar

1 teaspoon grated orange peel

1/3 cup orange juice

½ teaspoon grated lemon peel

2 tablespoons lemon juice

1 (16-ounce can or 2 cups) dark sweet pitted cherries,
drained, or 2 cups frozen dark pitted cherries

1 to 2 tablespoons Amaretto,
optional

Combine all ingredients except cherries in 10x6x1½-inch baking dish. Cover; bake at 350 degrees for 45 minutes. Add cherries; bake, covered, 15 minutes more.
