E pluribus meatloaf

MAKES 9 SERVINGS
3 pounds lean ground beef
4 eggs, lightly beaten
1 and 1/4 cups ketchup, plus more for the top
1 and 1/2 cups dry Italian bread crumbs
Salt to taste
2 dashes Tabasco sauce
2 dashes Worcestershire sauce
1 onion, peeled and finely grated
2 cloves garlic, peeled and crushed
1/4 cup chopped fresh chives
Handful of grated Parmesan cheese
1 heaping tablespoon mayonnaise
2 tablespoons sour pickle juice
1. Mix ingredients with hands.
2. Form large loaf in large pan. Coat outside with more ketchup.
3. Bake in a preheated 350-degree oven until done, about 1 1/2 hours.
