Beef brisket

February 16, 2005

MAKES 6 SERVINGS

1 (12-ounce) bottle chili sauce
1 (1-ounce) envelope dried onion soup mix
1 (12-ounce) can cola
1 (4-pound) beef brisket

In a large bowl, combine the chili sauce, onion soup mix and cola. Place brisket, fat side up, in a large roasting pan and pour chile sauce mixture over the meat. Cover pan tightly with foil and bake in a preheated 325-degree oven until fork-tender, about 3-1/2 to 4 hours.

Remove from oven and trim fat from top of meat. Slice meat thinly across the grain and return to pan with juices. Cover and reheat for 30 minutes. Serve hot.
