Bob jamieson's best meatloaf


MAKES 8 SERVINGS

1-1/2 cups finely chopped onion

1 tablespoon olive oil

1-1/2 pounds lean ground beef

1/3 pound ground turkey breast

1/3 pound ground pork tenderloin

2 tablespoons Worcestershire sauce

2 tablespoons Dijon mustard

1/4 cup fine bread crumbs

1 egg, lightly beaten

2 egg whites, lightly beaten

Salt and freshly ground black pepper to taste

1/2 cup ketchup, divided

Preheat oven to 350 degrees.

Saute onion in oil in a nonstick pan until it is quite soft and golden, about 7 minutes.

In a large bowl, combine onion, beef, turkey, pork, Worcestershire sauce, mustard, bread crumbs, egg, egg whites, salt and pepper, and 3 tablespoons ketchup. Mix until well-blended.

Press into a 9x5-inch loaf pan; pat gently to smooth and spread remaining ketchup over top to glaze. Bake for 1 hour or until center of meatloaf registers 160 degrees on an instant-read thermometer.

Slice and serve warm.
