Barbecued short ribs of beef

MAKES 5 SERVINGS

3 pounds beef short ribs

1 (6-ounce) can tomato paste

2 teaspoons salt

1/2 cup water

1/2 cup finely chopped onion

1 clove garlic, minced

1 cup ketchup

3/4 cup brown sugar, packed

1/2 cup vinegar

2 tablespoons prepared mustard

Place short ribs in a large dutch oven. Brown over moderate heat, turning to brown all sides, about 10 minutes. Cover and cook over low heat for 1 hour.

In a large bowl, combine tomato paste, salt, water, onion, garlic, ketchup, brown sugar, vinegar and mustard. Add to ribs, stir to coat. Cover and cook over low heat for 90 minutes or until meat is tender.

Remove meat from sauce, cover and refrigerate both the meat and sauce. Before serving, skim fat from sauce and any remaining on meat. Combine meat and sauce, cover and gently reheat.
