Beef filet with horseradish sauce

MAKES 6 SERVINGS

1 (3-pound) filet of beef

Olive oil

Salt and freshly ground black pepper

Horseradish sauce:

1 cup whipping cream

1/4 cup prepared horseradish, or more to taste

Salt to taste

Preheat your oven to 450 degrees.

Lightly oil, salt and pepper the filet. Cook the filet for approximately 35 to 40 minutes for rare, or longer, depending on preference. Remove from oven and let stand for a few minutes before carving.

Whip cream until fluffy, stir in horseradish and a pinch or two of salt to taste. Note that this sauce should be tangy but not overwhelming; add the horseradish a little at a time.

Slice thinly and serve with the horseradish sauce.

Note: This is an elegant main course that is extremely simple to prepare.
