Blueberry cobbler

MAKES 6 SERVINGS

2 cups fresh blueberries
1/3 cup sugar
3/4 teaspoon cinnamon
1 cup sifted cake flour or all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 egg
2/3 cup sugar
1/4 cup shortening
1/2 cup milk
1/2 teaspoon vanilla

Preheat oven to 350 degrees.

Grease 8-inch square baking dish. Wash and drain berries, discarding any bad.

Combine berries with 1/3 cup sugar and cinnamon. Spread evenly in prepared baking dish.

Sift flour, baking powder and salt together in mixing bowl; set aside.

Combine remaining ingredients in blender; blend thoroughly (about 1 minute). Pour blender ingredients over sifted flour mixture. Stir lightly just until smooth. Spread batter over blueberry mixture in dish.

Bake about 35 minutes or until cobbler is golden brown. Serve warm; if desired, serve with cream or ice cream.
