Baked apples with sweet ricotta

MAKES 4 SERVINGS

4 large Golden Delicious apples
2 tablespoons unsalted butter
1/3 cup sugar
1/2 pound whole milk ricotta cheese

Preheat oven to 350 degrees.

Wash and core apples. Fill each with a pat of butter and a teaspoon or so of sugar. Wrap each apple loosely in aluminum foil, place on a sheet pan and put pan on the middle rack of the preheated oven.

While apples are baking, combine the ricotta with the remaining sugar and fold thoroughly to incorporate.

When apples have cooled, remove and discard the foil and place apples on serving dishes. Cut each in half, scoop up a large spoonful of ricotta and place over each apple. Serve warm or at room temperature.
