BAKED SALMON WITH PINEAPPLE-GRAPEFRUIT SALSA

MAKES 10 SERVINGS
10 (5-ounce) salmon fillets, 2 tablespoons lemon juice 3 tablespoons olive oil 1 tablepoon salt
skin off
1 pineapple, peeled, cored and diced small 2 grapefruits, cut into 1 small red onion, diced small 2 tablespoons grapefruit juice ¼ teaspoon salt

Place salmon on baking sheet. Season by brushing with lemon juice and olive oil before sprinkling with 1 tablespoon salt. Bake for 10 to 15 minutes until golden brown and desired doneness.
Salsa: While salmon is baking, combine pineapple, grapefruit, onion, grapefruit juice and salt in medium bowl. Combine well. Top salmon with salsa just before serving.
