Cocadas (coconut macaroons)

MAKES 12 SERVINGS

1 cup coconut flakes
1/2 cup sugar
1 tablespoon cornstarch
1 egg, beaten
1 pinch cinnamon
1 pinch salt
2 tablespoons confectioners' sugar

Preheat oven to 325 degrees. Grease cookie sheet; lightly dust with cornstarch.

In a medium bowl, stir together coconut, sugar and cornstarch. Add the beaten egg, cinnamon and salt until well-blended. Drop by rounded tablespoonfuls in mounds onto prepared cookie sheet. Bake for 13 to 15 minutes, watching carefully until golden brown. Remove at once from cookie sheet to wire rack (macaroons will stick if allowed to cool on sheet). Allow to cool completely. Dust with confectioners' sugar. Store loosely covered.
