Cosmo cocktail cookie bars

MAKES 36 BARS
2¼ cups flour, divided ¾ cup (1½ sticks) cold butter, cut into pieces 4 eggs, beaten 1½ cups granulated sugar 1 (6-ounce) can frozen cranberry juice concen- trate, thawed 1 teaspoon pure orange extract 1 tablespoon vodka (optional) Confectioners’ sugar and finely shredded lime peel
In large bowl, mix 2 cups flour, confectioners’ sugar, lime peel and salt. With pastry blender or 2 knives, cut in butter until mixture resembles coarse crumbs. Press mixture evenly into greased and foil-lined (13-by-9-inch) baking pan. Bake 20 minutes, or until crust edges are golden brown.
Meanwhile, mix eggs, sugar, thawed juice concentrate, remaining ¼ cup flour, extract and vodka, if using, in large bowl until well-blended. (To substitute for vodka, add 1 tablespoon water.) Pour evenly over hot crust.
Bake 15 to 20 minutes, or until filling is set. Cool in pan on wire rack. Sprinkle with additional confectioners’ sugar and finely shredded lime peel. Cut into bars.
