MAKES 22 BISCUITS

1 cup extra-sharp Cheddar cheese, grated

8 tablespoons (1 stick) butter, melted

1½ cups all-purpose flour (plus more for rolling dough)

1 teaspoon salt

2 tablespoons half-and-half

Heat oven to 350 degrees. In a food processor, combine cheese, butter, flour and salt; pulse until mixture resembles coarse crumbs. Add half-and-half; process on low speed until dough forms a ball.

On a lightly floured surface, using a lightly floured rolling pin, roll dough to a rectangle one-eighth-inch thick. Cut biscuits with a cookie cutter, and transfer each biscuit to an ungreased cookie sheet, leaving 1/4-inch space between each.

Bake 15 to 17 minutes, or until edges are lightly browned. Cool. Store in airtight container.
