Banana cake

MAKES 18 SERVINGS

3 cups flour

1½ teaspoons baking soda

1½ teaspoons baking powder

1½ sticks margarine

1¼ cups light brown sugar

1 cup granulated sugar

3 eggs

3 large overripe bananas, mashed

1½ cups evaporated milk

2 tablespoons lemon juice

1½ teaspoons vanilla

Preheat oven to 350 degrees.

Sift flour, baking soda and baking powder together.

Cream margarine, sugars, eggs and mashed bananas until light and fluffy.

Add lemon juice to evaporated milk to make sour. Gradually add flour mixture and sour milk alternately to banana mixture. Combine well after each addition. Add vanilla; mix well.

Pour into greased 13-by-9-inch pan. Bake for 35 to 40 minutes. Frost with buttercream or cream cheese frosting.
