Key lime cake

MAKES 18 SERVINGS

1 1/3 cups sugar

2 cups all-purpose flour

2/3 teaspoon salt

1 teaspoon baking powder

1/2 teaspoon baking soda

1 (3-ounce) package lime gelatin

5 eggs

1 1/3 cups oil

3/4 cup orange juice

1/2 teaspoon vanilla extract

1 teaspoon lemon extract

1/2 cup Key lime juice

1/3 cup confectioners' sugar

Preheat oven to 350 degrees.

Spray and flour a 9-by-13-inch cake pan. Place dry ingredients (through gelatin) into a bowl; add eggs, oil, orange juice and extracts. Beat well until blended.

Pour into prepared pan; bake for 25 to 30 minutes or until done. Remove from oven; let stand for 15 minutes or until almost cool.

Using a fork, prick all over top with a fork; drizzle with lime juice and confectioners' sugar. Cover and refrigerate.
