Blueberry dumplings

MAKES 6 SERVINGS
BLUEBERRY MIXTURE

2 cups fresh blueberries, washed

1 lemon rind, grated

1 cup sugar

¼ teaspoon salt

3 tablespoons lemon juice

¼ teaspoon cinnamon

2 cups water

DUMPLINGS

2 tablespoons butter

½ cup sugar

½ cup milk

1 cup all-purpose flour, sifted

2 teaspoons baking powder

¼ teaspoon salt

OPTIONAL TOPPINGS

1 quart vanilla ice cream

Whipped cream

In deep heavy saucepan with a lid, combine blueberries with lemon rind, sugar, salt, lemon juice, cinnamon and water. Cook about 5 minutes while preparing dumplings.

For dumplings: Cream together butter and sugar; add milk. Mix in flour, sifted along with baking powder and salt. Drop batter by spoonfuls into heated blueberry mixture. Cover and boil gently over low heat for 20 minutes, without lifting cover. Serve warm with ice cream or whipped cream, if desired.
