Eleven City Diner's Mexican scramble with Francisco's salsa

MAKES 1 SERVING

2 whole tortillas, fried

FRANCISCO'S SALSA

1 Roma tomato, diced small

1 teaspoon yellow onion, diced small

½ teaspoon cilantro, chopped

½ teaspoon jalapeno (seeds removed), diced

Salt and pepper, to taste

SCRAMBLE

1/8 cup canola oil

1/4 cup chorizo sausage

2 scallions (white and green), chopped

3 large eggs, cracked and scrambled

1/8 cup shredded Monterey Jack cheese

Salt and pepper, to taste

Quickly fry tortillas in a nonstick skillet.

For salsa: Combine all ingredients through salt and pepper in a bowl. Mix. Can be made in advance and refrigerated.

For scramble: Heat a medium-size, nonstick skillet. Add canola oil. Add chorizo. When chorizo begins to sizzle, add chopped scallions. Cook 2 minutes. Add eggs. Stir with spatula until eggs begin to set. Add cheese, salt and pepper. Continue stirring until eggs set.

To serve: Place scramble mixture on of top of tortillas. Garnish with salsa. Serve immediately.
