The Popcorn Board has created three fun recipes - Cheesy Popcorn Bread, Chocolate Popcorn Biscotti and Chipotle Ranch Snack Mix - for families to make in the new year, the wish of Swap Shop reader L.T. of Chicago.
In addition, Edie Mikkelsen of Niles shares her recipe for Green Enchilada Sauce, requested by P.S. in Naperville.
To make 4 quarts of super-easy Chipotle Ranch Snack Mix, which will be a tasty addition to a Super Bowl menu:
In small bowl, mix together a (1-ounce) package (2 tablespoons) ranch salad dressing mix, ½ teaspoon chili powder and ¼ teaspoon garlic salt. Lightly spray 4 quarts of popped popcorn with cooking spray. Sprinkle 1 tablespoon of seasoning mix over popcorn; toss and serve. (Store remaining seasoning mix in airtight container for future use, or double recipe to use it all.)
To make Mikkelsen's Green Enchilada Sauce:
In small covered saucepan, simmer 4 good-sized fresh tomatillos (chopped), 2 tablespoons chicken broth and 2 tablespoons lime juice until soft.
In large saucepan, saute 2 tablespoons olive oil and 1 medium chopped onion until slightly softened. To softened onions, add 1 (4-ounce) can green chilies, 1 teaspoon oregano, 1 teaspoon cumin and 1 teaspoon sugar.
When tomatillos are soft, add to onion mixture; bring to a boil. Simmer, uncovered, about 30 minutes, stirring occasionally. Larger batches can be made and frozen for future use.

Growing up in the early '70s, I loved a cocoa mix my mother kept in a tin container. For the life of me, I can't duplicate it but it must have contained cocoa powder, powdered milk, powdered sugar, etc. It was far better than any commercial mix.
