Corn fritters

MAKES 16 PIECES

1 (15.25-ounce) can corn or 2 cups frozen corn kernels

1 egg

1/2 cup biscuit mix such as Bisquick

1/2 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons oil for frying

Drain or thaw corn. In a medium bowl, beat egg and add corn, biscuit mix, salt and pepper. Stir until well-combined; mixture will be very thick.

Heat a large skillet over medium heat. Add 2 tablespoons oil to pan and drop corn mixture by the tablespoonful into hot oil. Flatten fritters slightly with back of a spoon or spatula. Cook for about 5 minutes per side or until golden brown.

Remove from pan and serve hot.
