Chocolate Chip Zucchini Bread


MAKES 16 SERVINGS (2 LOAVES)

3 cups flour

3 eggs

2 cups sugar

1 cup vegetable oil

1 teaspoon vanilla

1 teaspoon cinnamon

1 teaspoon baking soda

1 teaspoon baking powder

1/2 cup sour cream

2 cups grated zucchini

1 cup mini-chocolate chips

1/2 to ¾ cup walnuts, finely chopped

Preheat oven to 350 degrees.

Grease 2 loaf pans. In large bowl, mix together ingredients through sour cream. Stir in zucchini, chocolate chips and nuts.

Pour into 2 loaf pans. Bake for 75 minutes. Cool for 15 minutes before removing (by cutting around edges of loaves) from pans; allow loaves to completely cool before cutting to serve.
