2¼ cups flour

1¼ cups sugar

1 tablespoon cinnamon

2 teaspoons baking soda

½ teaspoon salt

2 cups grated carrots

1 baking apple (peeled, cored and shredded)

½ cup shredded coconut

½ cup raisins

½ cup walnuts or pecans

1 (8-ounce) can crushed pineapple, drained

3 eggs

2/3 cup vegetable oil

1 teaspoon pure vanilla

Preheat oven to 350 degrees.

In large bowl, sift flour, sugar, cinnamon, baking soda and salt. Stir in carrots, apple, coconut, raisins, nuts and pineapple.

In separate bowl, whisk eggs together with oil and vanilla. Pour egg mixture into bowl containing dry ingredients; blend well. Pour batter into muffin cups; bake 20 to 25 minutes or until toothpick inserted in center comes out clean.
