Watermelon margarita


MAKES 1 DRINK

4 bar spoons superfine sugar

1 bar spoon sea salt

1 bar spoon pink peppercorns, crushed

Lime wedge

4 (1-inch) watermelon cubes, seeds removed

Juice of ½ pressed lime

1½ ounces fresh sour (see Note)

1½ ounces silver tequila

½ ounce triple sec

Watermelon wedge for garnish

To rim the glass: On a small plate, measure sugar, sea salt and crushed pink peppercorns. Stir gently. Rim the outside of the glass with a lime wedge. Roll the outside rim of the glass on the sugar mixture. Set aside.

In mixing glass, muddle watermelon cubes and lime juice. Add sour mix, tequila and triple sec. Add ice to tin. Shake all ingredients well. Strain into rimmed cocktail glass. Garnish with a watermelon wedge.

Note: To make fresh sour, stir together 2 cups lemon juice (approximately 8 lemons, juiced) and 1 cup simple syrup (equal parts superfine sugar and hot water, stirred or shaken until sugar dissolves).
